In a small pot, add 1 cup of sliced strawberries (save 1/2 cup for later). Mix in water, sugar and lemon juice and bring to a boil on high heat. Reduce heat, and simmer for 10 minutes or until desired consistency. Remove from heat and set aside.
In a separate pot, combine oats, milk and coconut milk and cook on medium/high heat until oats are fully cooked.
Top with strawberry coulis from step 1 and add other toppings as desired!
